Vanessa Simmons Brunch Choices
Vanessa Simmons is planning on making brunch for a group of her friends this weekend. She is not sure what to make. Help her decide on which recipe to use for the yummiest brunch by voting now!
A) California Omelet T & T
3 – 4 eggs
1 avocado, sliced
¼ c. milk
½ c. Monterrey jack cheese
2 – 3 green onions, diced
salt and pepper to taste
Beat the eggs with the milk and seasonings well. Pour into skillet and cook till lightly browned on one side and partially set on top. Sprinkle the avocado, onions and cheese on top and fold the omelet in ½ so the toppings are covered. Let cook about 10 minutes till everything is melded together. Serve.
B) PUMPKIN PANCAKES WITH LEMONY SUNSHINE SAUCE
Topped with a lemon sparked sauce, sliced bananas and pecans, these are light and fluffy, good for breakfast or brunch.
2 cups all purpose flour
3 tablespoons brown sugar
2 teaspoons baking powder
1 teaspoon baking soda
½ teaspoon salt
1 ½ cups milk
1 (9 ounces) jar Dickinson’s Country Pumpkin Butter
1 egg
2 tablespoons vegetable oil
2 tablespoons white vinegar
LEMONY SUNSHINE SAUCE:
¼ cup butter
2 medium ripe bananas, sliced
½ cup pecan pieces
1 (10 oz.) jar Lemon Curd
½ cup warm water
In a bowl, combine flour, brown sugar, baking powder, baking soda and salt; mix well and set aside. In a separate bowl, whisk together milk, pumpkin butter, egg, oil and vinegar until well blended. Add to dry ingredients and whisk just until smooth. Pour batter by ¼ cupful onto greased hot griddle. Turn when bubbles form on top; cook until the second side is golden brown.
Meanwhile, to make sauce, melt butter in a large skillet. Add bananas and pecans and sauté 2 minutes. In a small bowl, stir together lemon curd and water. Add to skillet and cook 2 minutes or until sauce is bubbly. Serve sauce over pancakes. Yield: 6 to 8 servings.
